Friday Live Well Recipe: Aloha Chicken

Get ready for a trip to a tropical island with Live Well Alabama’s Aloha Chicken. Step into the Live Well Alabama Kitchen for this tropical chicken recipe that is sure to be a new favorite for the whole family. Pineapple and chicken may be the new combination you never knew you needed.

“This is a great recipe for your little helper in the kitchen. Let your child spoon in sauce and spread veggies around in the pan. Enjoy a pineapple chunk or two before mixing them in. Tip: Try serving it over cooked whole-grain rice. Also, try this recipe with fresh pineapple. Choose one that is firm but slightly soft when squeezed.

Ingredients

  • Cooking spray
  • 6 skinless chicken thighs
  • 2 teaspoons chili powder
  • 2 teaspoons garlic powder
  • 2 teaspoons salt
  • 2 teaspoons pepper
  • ¾ cup sweet barbecue sauce
  • 2 cups red pepper, sliced
  • 1 can pineapple chunks, 20 ounces, drained

Directions

  • Preheat oven to 400 degrees. Spray baking sheet with cooking spray.
  • Pat chicken dry with a paper towel. Set to the side.
  • Mix chili powder, garlic powder, salt, and pepper in a small bowl.
  • Coat chicken on both sides with mixture.
  • Place chicken in pan.
  • Top chicken with barbecue sauce.
  • Spread peppers and pineapple around chicken.
  • Bake 40 minutes or until meat reaches an internal temperature of 165 degrees.
